Vitamin D Awareness
by Chef Noche

Chef Noche
In our newsletter titled "Top Five Vitamin and Nutritional Supplements" Vitamin D came in at #6. When I think of Vitamin D, I think of drinking milk. I couldn't be more uneducated so I set my browser to track any news releases related to Vitamin D. Here are a few:
  • New Study: Vitamin D Doubles Colon Cancer Survival Rates link
  • Low Vitamin D Levels May Raise Heart Risk link
  • Vitamin D: A Potential Role in Cardiovascular Disease Prevention link
  • Most Americans Vitamin D Deficient link
  • Vitamin D Boosts Treatment of Chronic Hepatitis C link
  • Physicians Explore Link Between Vitamin D Deficiency and Hypertension link
  • Women with Breast Cancer Have Low Vitamin D Levels, Scientists Discover link
  • Vitamin D Emerges as Treatment for Prostate Cancer - Cuts PSA Levels by Half link
  • Vitamin D Deficiency May Increase Blood Pressure In Women, Study Says link
  • Want to live longer? Try Vitamin D link
Wow, that is an impressive list of news releases. I felt surprised my doctors never mentioned this vitamin because it seemed like Vitamin D either prevented or cured everything. Like a sign from above, I receive an email with this news release:
  • Vitamin D to Prevent Everything from A to Z link
Amazing. As it turns out, Vitamin D is not a vitamin at all. It is a hormone that affects more than 2,000 genes in our bodies. The best way to get Vitamin D is from the sun. Our skin photochemically produces Vitamin D. You need about 20 minutes of sun bathing on each side to get your daily dose of Vitamin D from the sun. No wonder:
  • Vitamin D Deficiencies Rise as Winter Arrives link
Vitamin D from Food
It seems that 500 IU of Vitamin D is the recommended amount to maintain a healthy immune system, but 1,000 IU is recommended if you have a deficiency. Americans average 100 IU per day.  New research is showing 2,000 IU may become the new daily requirement.  You need a blood test to determine your current level.  Very few foods are rich in Vitamin D, but here are some good sources:
  • Catfish (3 oz.) provides 425 IU
  • Salmon (3 oz.) provides 360 IU
  • Canned Tuna in Oil and Drained provides 200 IU
  • Eel (3.5 oz.) provides 200 IU
  • Whole Milk 80-125 IU per Glass
  • One whole egg provides 20 IU
Vitamin D and Your Immune System
It has recently been shown that a significant supply of vitamin D may keep the immune system strong and reduce risk of several cancers. Vitamin D plays an important role in activating the immune system, and may help control autoimmune diseases. In the future, Vitamin D may be seen as "nature's antibiotic."

In Summary
My goal with this newsletter is only to create awareness of Vitamin D. As a diabetic, I'm always going to the doctor to maintain my lifestyle, but I am going to get myself tested on my next visit.

Then I'm going to build my own eel smoke shack (yum) in the backyard. Hmmm ... I may have to run that one by Mrs. Noche first, but through my new awareness, diet, and supplements I know I can do better than the 100 IU of the average American gets.  And any boost I can make to my immune system is all gravy.

Sincerely,
Chef Noche
