What is Filet Mignon?

Filet mignon, which is French for "dainty fillet," is a beef steak cut from the tenderloin of a steer or heifer. The tenderloin runs along either side of the spine, and is usually harvested as a long and slender cut of beef. The thicker side of the filet mignon tenderloin is also known as a Chateubriand Roast. When the tenderloin is cut into portions before cooking, that portion is known as a filet mignon. Steaks cuts from the smaller end of the beef tenderloin often become Bacon Wrapped Filet Mignon.

The filet mignon is generally considered the most tender cut of beef because this section of the animal gets very little exercise, making the meat very tender. Known as the "Queen of Steaks", Filet Mignon is generally a popular steak choice with women.
